Planting at a glance
- Season: Cool season
- Start: Direct sow
- Seed depth: ½ inch
- Germination: Allow about 7–14 days in cool, moist soil; warm soil can delay or prevent germination
- Final spacing: Thin to 2–6 inches; rows about 12 inches apart
- Light: Full sun
- Harvest planning: Typical crop window: 45–60 days from sowing for larger plants; baby leaves can be harvested earlier
When to plant
Plant during your local cool growing season. In colder regions, use spring or late-summer/fall sowings and allow enough growing time before hard freezes. South Florida outdoor window: October–February.
How to plant
- Prepare loose, well-drained soil or a clean seed-starting mix. Direct sow.
- Sow ½ inch deep. Keep the seedbed evenly moist until seedlings emerge. Then water when the soil needs it, allowing excess water to drain.
- Thin or transplant to the listed final spacing. Give seedlings sufficient light and check moisture as roots establish.
How to harvest
Pick tender leaves before plants send up flower stalks. Leave the crown and smaller leaves for another picking where growth remains healthy.
Aunt E’s tip: Choose the cooler planting window rather than trying to force true spinach through hot weather.
Growing notes and sources
Timing is a planning range, not a guaranteed harvest date. Temperature, moisture, variety and season affect the result. Count from the sowing or transplanting point stated above.
