Ha Gobo burdock (Arctium lappa) is a Japanese variety grown for its long, tender, earthy-flavored roots, prized in Asian cuisine and herbal medicine. Non-GMO, open-pollinated, cool-season annual. Roots are crisp with nutty undertones; young leaves and stems are also edible when cooked.
The thick white stalk averages about 12" long with light-green, tender leaves. The edible root averages about 6" long and is delicious fresh in salads, with a pleasant earthy aroma. Versatile in the kitchen for stir-fries, soups, and pickling.

Containers: Needs deep containers (at least 18–24 inches) for full root development.
